Offering unmatched guest services within accommodation, leisure and F&B, they are now searching for a Director of Cuisine to lead the overall kitchen operations. This position aims to offer the best and exclusive food and beverage service to the guests. The ideal candidate will have a very strong working background within a multi-cultural environment and be responsible for budgets and cost control, recruitment and development of the kitchen team, HACCP Health and Hygiene monitoring and maintenance as well as remain highly creative in designing eclectic menus and regular promotions. Key Attributes: • Must have a strong background within upmarket and world famous restaurants (not just hotels) • Excellent knowledge of Pan Asian and Grill, with a contemporary twist is required using modern cooking techniques • Michelin/ Hat background will be a big plus • Provide supervision, training, direction and leadership to all kitchen staff • Ensure smooth operation in the kitchen areas • Monitor all the food preparation • Confidently manage a kitchen team of 100 people • Manage “show kitchens” efficiently and interact with the customers showcasing excellent communication skills • Capable of organizing and managing medium to large sized functions and events as well as outdoor caterings • Prepare and strategise various food promotions to ripen the F&B revenue streams • Should be in control of purchasing, receiving and storing • Ensures the highest level of food safety and security • Must have excellent communication skills in English and an additional European language • Have strong leadership and training skills • Should be HACCP certified"
